Stuffed Pretzel Breakfast Biscuits

Yields 9 Stuffed Pretzel Biscuits

 

Biscuits:

1 C Bread Flour

1 C All Purpose Flour

1 TBS Sugar

3 tsp Baking Powder

1 tsp Salt

1 1/2 tsp Garlic Powder

1/2 C Shredded Parmesan 

1/2 C cold Unsalted Butter

3/4 Cup Milk

1 Egg (for egg wash)

 

Filling:

1/2 C packed Fresh Spinach 

1 Morning Star Sausage

1/2 C smoked Gouda

1 - 1 1/2 Eggs

Salt

Pepper

 

Boiling Water:

2 Gallons Water

1/4 C Baking Soda

 

Gravy:

2 TBS Butter

1/2 Not Chicken Chicken Bouillon Cube

3 TBS Flour

1/2 tsp Pepper

1/4 - 1/2 tsp Kosher Salt

1/4 tsp Garlic Powder

2 Sprigs Rosemary

As some of you know, if you are following my LMP Facebook page, I had a mini meltdown last week. You know that old Laverne and Shirley theme "....schlemiel, schlimazel, hasenpfeffer incorporated?" Well, as best described on Urban Dictionary:

 

A "schlemiel" is the guy/girl most likely to spill the wine at dinner. 
A "schlimazel" is the guy/girl most likely to have the wine spilled on him

 

Now who's who in our house? As much as it pains me to say....I am indeed the schlemiel, and my ever so sweet husband is the schlimazel. That man has seen me through every spill, fire disaster, knife cute, and burn that your klutzy blogger seems to encounter on a daily basis! This amazing man is the entire foundation that keeps me, and the LMP kitchen standing!! 

Seriously though, kitchen catastrophes happen!! Don't let it discourage you from trying it again! This is the way we learn, and this recipe is the way you apologize when you go a little coo coo in the kitchen! ;)

 

Start by combining all of your biscuit ingredients, besides your milk, in the food processor. Pulse until the mix is well combined, feel giddy for a moment and then calm down and place your beautiful mix into a bowl!

 Mix in your milk until the dough becomes sticky, and let's face it.... a total mess! Kneed that mess, on a lightly floured counter, and add in small amounts of flour until your mix is slightly moist, but dry enough to roll out. 

Flatten any stresses you might have from your week into this dough, with a rolling pin, and roll out until it is 1/2 inch thick. Next use a rocks glass to cut out the biscuits, re-rolling out your dough as needed, but being careful not to overwork the dough. Place biscuits onto a parchment lined baking sheet, and put them into the fridge to stay chilled.

 

*Now is a good time to bring your water to a boil (Do not add in your baking soda! We will harness this want for now, and add it in a bit later).

Preheat your oven to 450°, and begin to prep your filling! Chop up your spinach, grate your gouda, and set aside. Scramble your egg, and microwave the veggie sausage then place in the fridge to cool. Once cooled mix all ingredients together, and grab those biscuits out of the fridge. Make a small well in the center of the dough, and fill it with those now prepped goodies!

 Divide your filling ingredients evenly throughout the biscuits and enclose them by pushing the edges of the biscuits together until it forms a ball, and all the gaps are closed.

 Now that your water is boiling, add your baking soda into the water. It will look like Halloween, and yes, you will be very excited! Boil for 30 seconds and return boiled biscuit-like-roll back onto your parchment paper. Repeat until all the biscuits are boiled then brush on your egg wash, and top with any kinds of seasonings that sound tasty to you! Bake for 16 minutes, flipping them half way through to ensure they cook evenly. Set them aside to cool, and pause for a moment to delight in this heavenly smell!

Let's hop on this gravy train! Begin by mixing in a sauce pan your butter, spices, and bouillon cube over medium low heat until they are well combined. Add in your flour and mix together for about 15-30 more seconds. Add in your milk and rosemary, and bring up to medium high heat to thicken. Once it has reached your desired thickness remove from heat and get ready to delight in your unnecessary, but so earned, calories!

 I like to put my gravy in a serving dish so my guests can dip into it, and savor the flavor again and again, and you can serve them smothered in sausage gravy too! Stuff them with your favorite pizza sauce and toppings and serve them with a ranch or marinara dipping sauce! Leave out the filling and make mini pretzel biscuit bread bowls for your chili. Good God…I know! They are the perfect game day treat, morning breakfast goodie, or even just a fun snack on the go but they will be devoured quickly! So stash a few for yourself, and enjoy the fruits of your labor - or in this case the biscuits to your gravy! ;) Till next time foodies!
