Grilled Avocado Vegan Mayo
1Tbs White Vinegar
1 Tbs Lemon Juice
1/2 Tbs Whole Grain Dijon mustard
1/4 tsp Salt
1/2 TBS Olive Oil

This is a quick and simple recipe that will add a healthy zing to any sandwich, or dressing that it touches. Start by spraying your avocado with with olive oil and grilling it on high, face down, for 5 minutes.
Sizzle Sizzle.... (Also don't forget to take the peel off of your avocados! Your blogger did not remember to do this, and had quite the George Foreman cleanup on her hands) Doh!
Put all your ingredients, besides your oil, into a food processor and combine until mix is smooth and creamy. Scrape the sides of the bowl, add in oil, and blend again for another minute or so. Store your 'mayo' in an air tight container and it should stay nice and colorful for about a week. I mean would you look at that color? I did for about a minute, and then I added it to my Jackfruit Chicken Salad Sandwich and dove in! Now, you can too, foodies :)
