Cauliflower Crust Pizza:
1 C Mozzerella
1/2 C Shredded Parm
2TBS Italian Seasoning (or my soon to be release "Operetta" Italian Seasoning)
1 TBS Parsley
1/4 tsp garlic powder
1/4 TBS Oregano

It's one of those perfect days, where everything falls into place. My husband thought to buy me a gorgeous bouquet of my favorite flowers, my labels for the new spice line turned out just right, and we met the sweetest man in the checkout line of Trader Joes! Came home to blend my last new LMP spice, and am one day closer to the release of my full seasoning line this next week!
Let's begin with 'ricing' our cauliflower. Cut it into small florets, and pulse in your food processor until it becomes rice-like (best described by this picture below).
Once all of your cauliflower is 'riced' get a large pot, fill with 2-3 inches of water, and place cauliflower in a kitchen towel inside a colander. Put a lid on your pot, and cook for 15 minutes. Allow to cool while preheating your oven to 400°.
Take your cheese and spice ingredients, and mix together in your food professor. If you feel the need to eat some of this I highly recommend 1-2 tsp, every 2-3 hours!
Now that you fed your cheeses cravings and the cauliflower has cooled, squeeze as much of the liquid out as possible, and put it into a bowl with everything but your eggs. Mix ingredients together, add those cluckers, then mix again. Line a baking sheet with parchment paper and then spread your mix out into the shape of a rectangle, circle, or shape of North America, with the end result of a crust that is 1/2-1/3 inches thick. Cook for 40 minutes.
Flip your crust over and coat with sauce, and your desired pizza toppings. I am using Alfredo sauce with crimini mushrooms, broccoli, asparagus, minced garlic, red onion, asparagus, blackened salmon, fresh basil, feta, and mozzarella. If you just drooled a little over this flavor tower of yum, proceed to add all these ingredients onto your pizza, and then cook again for 20 minutes. If you are craving something a bit different then top with your own choice of goodies, cook for 20 minutes, and advance to shoveling this bad boy in! None of the guilt, and all the glory!
