Grilled Guacamole

Yields 1 Lg Bowl of Guac

 

3 Avocadoes

2 Roma Tomatoes

3/4 Red Onion

1-2 Jalapenos (depending on size)

1 Habanero

2 Lg Garlic Cloves

1/2 – 1 TBS Cumin

1/2 – 1 tsp Salt

1/2 tsp Pepper

Have you ever been to the store and just couldn’t seem to find ripe avocadoes? This is a common problem in my household, resulting in my collection of dense unusable avocado paperweights. Ok, so I don’t have a collection of rotting produce, but at least we all had a good laugh, right? This recipe happened by chance when I was making guacamole, and all I had were firm, stubborn avos. It’s not their fault; they were probably just born under the zodiac sign of Taurus ;) Anyhow, I decided to try them on the grill and see if I could coax them into coming out of their shell. My husband had a good laugh as I leaned over the grill to have this conversation with my produce, but I was willing to face this humility if it meant that soft and creamy avocadoes were the end result. Not only did it work, but they turned out to be packed with flavor, due to the layers of char that had formed on the outside! I am one who likes to save everything, in hopes of reinventing it the next day into something new, and to my surprise my guac remained fresh for days! Can you imagine how those flavors taste after they have had time to set up? No you can’t because you, just like me, were stuck with brown goopy ewwww the next day! Not anymore! This recipe can be served immediately, but tastes even better after having a day to develop it’s flavors a bit!

Spray your avocados, jalapeños, habaneros, and garlic with oil and grill on high for 10 minutes. Rotate your peppers, and garlic as you grill, but keep the avocados face down. 

Add all your grilled ingredients, and spices, into your food processor and puree away!

Next let's chop up our tomatoes, and onion. Add them into a bowl, with your pureed mix, and combine together until they are well incorporated. Garnish with a bit of your left over onion, or you can even leave this guacamole in its Birthday Suit! This has always been the star of my parties and now you too can be a part of this elite, self dubbed, guacamole club!
