Being that we are living in a very accessible day and age, experiencing something that is truly new can be very exciting! We are no longer in the simplistic days of root beer floats and black and white movies; instead we have progressed into a world full of color. It takes imaginative minds to come together to create an authentic experience, and 1515's Rewind Lounge is nothing short of a food enthusiast’s wonderland. Color changing walls, molecular cuisine, and a full spectrum of libations that will give you a contemporary take on the classic cocktail.

1515 Restaurant has been dishing up superlative fine dining for 20 years in Denver! Chef Tang's vision for Rewind is to take his concept and make it approachable for those looking for a contemporary environment to enjoy everything from light fare ($8-$10), small plates ($6-$8) and entrées ($15-$22,) with the option of the full 1515 menu as well. It's a refreshing atmosphere to enjoy great conversation, alongside conscious food that will satiate your belly without breaking the bank. Rewind also offers some exciting specials in food, and drinks, during their Monday-Friday Social Hour. $3 well drinks, $4 craft drafts, and $5 house wines and specialty cocktails, not to mention their daily list of over 500 wines that you can delight in, while you unwind from your work week. It's one of the only places I know of that you can delight in an affordable bottle of wine, as well as find something crafted for a special occasion.

My Shattered Lemon and Raspberry Hard Lemonade was a foolproof pairing with the decadent samplings of Rewind's small plates. Bites of Escargot Rockefeller, and Chinese Steamed Buns with Pork Belly were just a few of the creations made by Executive Chef Gene Tang, that tantalized the senses. His passion for food is undoubtedly present in each detail you experience on your plate, and Chef Tang has paid very close attention to where his food is sourced from too. I mean, does it get any better than Wagyu Beef that is raised in Colorado, and comes from a 7X sustainable ranch? It does when it's prepared on a hot stone right in front of you! The way Chef Tang explained how the extraordinary marbling of the beef causes it to melt in your mouth when you take a bite, would make any pescatarian blogger want to jump ship! This is one of the many reasons I bring my husband with me. I live vicariously through his eyes rolling back in his head when he devours something unreal, and he gets the added bonus of experiencing it twice. End result? One SUPER happy husband, a great perspective on how the flavors taste, and one long conversation on how I might need to reconsider my 20 year commitment to vegetarian/ pescatarian living! ;)

Rewind has something for everyone, and makes dining out something you will never forget. You will be sure to find me there on my next trip to Denver, and I can't wait to see all of the inventive creations to come from Chef Gene Tang, and his out of this world hip new addition to the Colorado Scene.
